Embracing New Traditions: Thanksgiving for Families with Specific Food Needs
As many of you know, I love to cook. I have cooking newsletters in my series “Mrs. Pinky Cooks” and more of those are coming soon. I learned at a young age mimicking my grandmother, my mom and my older brother in trying to make tasty foods. When I joined the U.S. Army, I worked along some really good cooks and even got to spend a few weeks with high class culinary arts training. It is a joy of mine to put great food together.
Yet, my husband has a high a1c, I have a gluten, milk and wheat sensitivity and our son is the same. So, this year, I am adamant to test my skills, as is my husband, to feed our family good food that meets our special dietary needs.
Thanksgiving is a time for gathering with loved ones, sharing gratitude, and enjoying a bountiful meal. However, for families with specific food needs—whether due to food allergies, religious dietary restrictions, or medical dietary needs—it can also be a time of careful planning and creativity. The good news is that with some thoughtful adjustments and new traditions, everyone can enjoy a wonderful Thanksgiving feast.

Navigating Food Allergies
For families dealing with food allergies, it's essential to identify safe foods and avoid cross-contamination. Here are some tips:
Clear Communication: Clearly label dishes with allergen information and communicate with guests about any food allergies in advance.
Safe Alternatives: Find or create recipes that exclude common allergens like nuts, dairy, and gluten. There are many delicious alternatives available.
Recipe: Gluten-Free Stuffing Ingredients:
1 loaf of gluten-free bread, cubed
1 cup of chopped celery
1 cup of chopped onion
2 cups of gluten-free chicken or vegetable broth
1/4 cup of butter or dairy-free alternative
1 tablespoon of poultry seasoning
Salt and pepper to taste
Instructions:
Preheat the oven to 350°F (175°C).
Sauté celery and onion in butter until soft.
In a large bowl, combine bread cubes, sautéed vegetables, and seasonings.
Gradually add broth, mixing until bread is moist but not soggy.
Transfer to a baking dish and bake for 30-35 minutes, or until golden brown.
Respecting Religious Dietary Restrictions
For families observing religious dietary restrictions, incorporating traditional dishes that adhere to their guidelines can make the meal more inclusive and meaningful:
Kosher Thanksgiving: Ensure that all ingredients are kosher and avoid mixing meat and dairy.
Halal Thanksgiving: Use halal-certified meat and avoid alcohol in cooking.
Recipe: Halal Roasted Turkey Ingredients:
1 whole turkey, halal-certified
1/2 cup of olive oil
1/4 cup of fresh lemon juice
2 tablespoons of garlic powder
2 tablespoons of paprika
Salt and pepper to taste
Instructions:
Preheat the oven to 325°F (165°C).
Mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
Rub the turkey with the mixture, ensuring even coverage.
Place the turkey in a roasting pan and cover with foil.
Roast according to the weight of the turkey (usually about 15 minutes per pound), basting occasionally.
Remove foil for the last 30 minutes to allow the skin to brown.
Managing Medical Dietary Needs
For families with medical dietary needs, such as diabetes or heart disease, focusing on nutritious and low-sugar options is key:
Diabetic-Friendly: Create dishes with low glycemic index ingredients to help manage blood sugar levels.
Heart-Healthy: Use heart-healthy oils and limit salt and processed foods.
Recipe: Diabetic-Friendly Pumpkin Pie Ingredients:
1 prepared whole wheat pie crust or gluten-free alternative
1 can (15 oz) of sweet potato puree or 2lbs free sweet potatoes
1 cup of unsweetened almond milk
1/2 cup of sugar substitute (like Stevia)
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground ginger
1/4 teaspoon of ground cloves
2 eggs
Instructions:
Preheat the oven to 375°F (190°C).
In a large bowl, mix together pumpkin puree, almond milk, sugar substitute, spices, and eggs until smooth.
Pour the mixture into the pie crust.
Bake for 50-60 minutes, or until a knife inserted into the center comes out clean.
Cool before serving.

Thanksgiving is an ideal time to create new traditions that accommodate everyone's needs and make the holiday special:
Recipe Sharing: Encourage each family member to contribute a dish that meets their dietary needs and share the recipes.
Gratitude Jar: Start a gratitude jar where everyone writes down what they’re thankful for and shares during the meal.
Inclusive Activities: Plan activities that everyone can enjoy, such as a family walk, board games, or storytelling.
By being mindful of specific food needs and embracing new traditions, families can ensure that Thanksgiving is a joyful and inclusive celebration for everyone. Whether it is Muslim family requirements, vegan or vegetarian options, or simply reducing so much sugar, there are tons of ways to eat good and stay healthy. Here are some delicious and inclusive recipes for a Thanksgiving feast that caters to vegan, vegetarian, and allergy-specific dietary needs:
Vegan Thanksgiving Stuffed Squash
Ingredients:
2 acorn squashes, halved and seeds removed
1 cup quinoa, rinsed
2 cups vegetable broth
1 small onion, chopped
2 cloves garlic, minced
1 cup chopped kale
1/2 cup dried cranberries
1/2 cup chopped pecans (optional for nut allergies, can substitute with seeds)
1 tsp ground sage
Salt and pepper to taste
Olive oil for drizzling
Instructions:
Preheat the oven to 400°F (200°C). Place the squash halves cut side down on a baking sheet and roast for about 30 minutes or until tender.
In a pot, cook quinoa with vegetable broth according to package instructions.
In a large skillet, sauté onion and garlic in olive oil until soft. Add kale and cook until wilted.
Stir in cooked quinoa, dried cranberries, and pecans. Season with sage, salt, and pepper.
Fill each squash half with the quinoa mixture. Drizzle with olive oil and bake for an additional 10 minutes.
Serve warm and enjoy!
Vegetarian Green Bean Casserole (Dairy-Free)
Ingredients:
1 lb fresh green beans, trimmed
2 tbsp olive oil
1 medium onion, thinly sliced
2 cloves garlic, minced
2 cups mushrooms, sliced
1 cup vegetable broth
1 cup coconut milk
2 tbsp all-purpose flour
1 cup crispy fried onions (check for dairy-free options)
Instructions:
Preheat oven to 375°F (190°C). Steam green beans until tender and set aside.
In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
Add mushrooms and cook until they release their moisture and start to brown.
Sprinkle flour over the mushroom mixture and stir well. Gradually add vegetable broth and coconut milk, stirring constantly until thickened.
Combine green beans with the mushroom sauce and transfer to a baking dish.
Top with crispy fried onions and bake for 20-25 minutes, until bubbly and golden.
Allergy-Friendly Pumpkin Pie (Gluten-Free, Nut-Free, Dairy-Free)
Ingredients:
1 gluten-free pie crust (store-bought or homemade)
1 can (15 oz) pumpkin puree
1 cup coconut milk
1/2 cup maple syrup
2 tbsp cornstarch
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/4 tsp salt
Instructions:
Preheat oven to 350°F (175°C). Place the pie crust in a pie dish and set aside.
In a large bowl, mix pumpkin puree, coconut milk, maple syrup, cornstarch, spices, and salt until smooth.
Pour the mixture into the pie crust.
Bake for 50-60 minutes, or until the center is set and a knife inserted into the center comes out clean.
Cool completely before serving.
Lentil Loaf (Vegan, Gluten-Free)
Ingredients:
1 cup dried lentils, rinsed
2 1/2 cups water
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup finely chopped carrots
1 cup finely chopped celery
1 cup rolled oats (gluten-free)
1/2 cup tomato paste
1 tbsp soy sauce (gluten-free tamari or coconut aminos for gluten-free)
1 tbsp flaxseed meal + 3 tbsp water (flax egg)
1 tsp dried thyme
Salt and pepper to taste
Instructions:
Preheat the oven to 350°F (175°C). Grease a loaf pan and set aside.
In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 30 minutes, until lentils are tender and water is absorbed.
In a skillet, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté until vegetables are soft.
In a large bowl, combine cooked lentils, sautéed vegetables, oats, tomato paste, soy sauce, flax egg, thyme, salt, and pepper. Mix well.
Press the mixture into the prepared loaf pan and smooth the top.
Bake for 45-50 minutes, until firm and browned on top.
